Shrimp Stir Fry

Ingredients:
30 small shrimp (frozen, pre-cooked, deveined, tail off)
3/4 Wishbone Fat Free Italian dressing
3 cups frozen veggies (I like stir fry mix, but pick your favorite)
2 cups sliced mushrooms
1/2 chopped onion
1 orange
2 TBS chunky peanut butter
3 TBS Lawry's Pineapple Teriyaki sauce
2 TBS Worcestershire sauce
2 TBS soy sauce

1. Put shrimp and Wishbone Fat Free Italian into a container, allow to marinate until shrimp are thawed (I prefer to leave them in the fridge overnight).

2. Microwave frozen veggies and drain off excess water.

3. Spray large pan or wok with non-stick spray. Place over medium to high heat. Add onions and mushrooms, allow to cook a little before adding mixed veggies. 

4. While veggies are cooking, mix together peanut butter, Teriyaki sauce, Worcestershire sauce, and soy sauce (it helps if you heat them up a little first). Add to stir fry.

5. Add thawed and marinated shrimp.

6. Cook everything, stirring frequently, until it is cooked to your preference.

1 C stir fry + 10 Shrimp = 250 calories

Taco Tuna Salad
(From Hungry Girl's 200 Recipes Under 200 Calories)

Ingredients:
One 6 oz. can tuna packed in water, drained
2 TBS fat-free mayonnaise
2 TBS salsa
2 TBS chopped red bell pepper
2 TBS chopped green bell pepper
1 TBS chopped onion
1 TBS taco sauce
3/4 tsp dry taco seasoning mix
1/2 tsp chili powder
1/4 tsp cayenne pepper

Mix and Enjoy!

Cheesy Butternut Bake
(From Hungry Girl's 200 Recipes Under 200 Calories)

Ingredients:
4 C Butternut squash, cubed
2 wedges Light Laughing Cow Original Swiss, room temp
3/4 C diced onion
1/4 C fat-free liquid egg substitute
1/2 tsp salt
1/4 tsp chili powder
1/8 tsp black pepper

1. Microwave squash w/ 1/4 C water for 6 minutes, covered.

2. Cook onion in pan with non-stick spray.

3. Mix all ingredients except onion in blender until mixed, but not liquefied.

4. Add onion. Transfer to small casserole sprayed w/ nonstick spray.

5. Bake at 350 degrees (Fahrenheit) for 35 to 40 minutes, until edges start to brown.

1/4 casserole = 101 calories
